Every year as July 4th rolls around I begin to think about the perfect BBQ fare. Something that can be prepared in advance, easy to eat, and packs a major explosion of flavor.  Most often the first thing that pops into mind is grilled jumbo shrimp arranged on wooden skewers with a perfectly tangy, herby, & citrusy flavor! This particular recipe is one that I make with my eyes closed – it’s my go to summer grillin’ favorite that just about everyone loves. There’s something about the Mediterranean union of shellfish simply prepared with the holy trinity of garlic, lemon, & olive oil!  With the addition of a fragrant fresh herb like oregano ….POW! it’s all you need.

Buy a few pounds of shrimp, skewer them up prior to guest arriving, pre-make your marinade hours in advance, and simply slather over the shrimp 15 minutes before grilling.  The best part is that these flavor-bursting suckers take only 8 minutes to grill so you have minimized time sweltering over the grill and more time enjoying your guests!  The majority of your marinade is reserved for after grilling so you savor that bright lemony bite that’s full of punchy flavor.  Make these shrimp for your Independence Day celebration and all summer long…promised to swoon & satisfy!
