Pot de creme mainI was recently featured in The Kinfolk Table cookbook ~ an incredible honor as I am a massive fan & continually inspired by the Kinfolk team! The photography, recipes, mission, & overall aesthetics of both the magazine & cookbook are without a doubt swoon-worthy!

While perusing the recipes in the cookbook, I was especially smitten & intrigued by the flavor combination in the chocolate pudding with lavender & early grey tea by Kinfolk contributors Andrew & Carissa Gallo. I happen to have a deep love & obsession for a super creamy pot de crème & my husband is a chocolate fanatic so I set out on an endeavor to master a pot de crème with inspiration from this Portland couple.

The floral notes of the lavender combine incredibly with the classic black tea, all encompassed within an envelope of rich velvety chocolate.  Cooking these creamy creations inside a water bath guarantees silky results! And as always – a delicate dusting of Maldon sea flakes never hurt anyone ~ on the contrary it elevates all the flavors with a tang of saltie goodness. This is a perfect dessert to make in advance for dinner parties & can certainly hold court around the holiday table to SWOON your friends & family!
