mozzarella farm main2So many things had been overwhelming in the best way, at Westwind, but I was particularly excited to witness homemade mozzarella making. I mean Holy Swoon! It’s one thing to be surrounded by passion, it’s another thing to be surrounded by passionate Italians! Their love of food & craft, ingredients with integrity & quality and of course, community, adds a joy and richness to the every dining experience. I’m an Italian lover, always have been! I truly think the flavors and the language are as much a form of expression as song & dance. It’s a rhythm that has always spoken to me.

While we were at Westwind, Laura and Fabio’s dear friend’s Chicco (Massimiliano Nanni) and wife Paola, owners of Italian restaurant Piadina in NYC and Celestino in Bed Stuy Brooklyn, shared their mozzarella making with all of the day trippers visiting the farm. They were just doing what they’ve always done – making great food using the finest ingredients from scratch – but I was overjoyed. Their two young children were busily chopping the curd like old pros. Clearly there was a whole way of life on display!

And the mozzarella itself….swoon! It was beyond delicious served with crostini with a variety of roasted farm veggies, tomatoes tossed with herbs, and sautéed greens….all in perfect Dansk enamel bowls. Such a swoon-worthy display of simple delight!

That night as the sun was setting and the farm’s visitors were slowly beginning to get back into their cars and head home, Chicco still outdoors on the farm over a wooden table set out to make a homemade pasta. Our day of cooking and swooning ended with a massive bowl of linguini and lobster with farm-made tomato sauce. It was a perfect meal – lots of adults and lots of children running around a massive reclaimed wooden table stretched across the barn. Plus plenty of wine, candles, Italian chatter and laughter….a perfect relaxing celebration of a day well spent on the farm. For Laura and Fabio this is what life is all about, and I couldn’t be more grateful to have been welcomed at their table.
