Westwind Squash Main

After an amazingly beautiful fall day on the farm at Westwind Orchard – picking and choosing from some of the finest, freshest organic ingredients – I decided to honor the simplicity of country living and agriculture to make a perfect roasted delicata squash. Of course I had to add a swoon-able twist, so I decided to integrate Westwinds own maple syrup, fresh sage, red peppers and pepitas! I got to work in the barn prepping the squash on Laura’s stunning poured-concrete kitchen counter, looking out her perfectly placed paned-window at the rolling farm hills. Absolute SWOON!

With the squash roasting in the oven I cut across the pasture to visit Laura in the farm store. I had been so busy prepping ingredients and styling the tabletop that I hadn’t even noticed the crowd that had arrived to pick apples. Suddenly the farm was alive with people, all lovely and appreciative of Westwind. There were day-trippers from the city mixed with many Italians, and of course locals. The energy was vibrant and palpable, and I was running on a high, happy to be part of this thriving community. Everywhere I looked children were running and laughing and eating apples. Matteo, Laura & Fabio’s son, and Jivan were busy making apple cider (and sneaking out for rides on a quad zipping around the farm) with grins spread ear to ear. Laura just might be the most gracious hostess I’ve ever met, literally opening her home to hundreds of people every weekend. I was overwhelmed by the joy of the day. It didn’t feel real – the community, the farm, the family, the food, the barn! It simply took my breath away at every turn. The leaves were just turning tones of yellow and auburn and the sun could not have been shining brighter on this fall day.

I headed back to the barn to check on the squash surrounded by the coziness of creative friends Chloe Crespi & April Flores. When the squash did emerge from the oven, it was perfectly golden on the edges and after finishing with a touch more fresh sage I immediately made a plate to bring to Laura. I was offering her a gift that she had essentially offered to me! It was a proud and profound moment. Laura and I took one look at each other and knew, we were family. This amazing couple had welcomed me into their home with such a wonderful embrace; it felt like we’d known each other for a lifetime.
