An un~beet ~able Tart!

beet tart mainCombining savory cooking with the precision of baking feels like the synergistic union of two very distinct extremes of my personality.  I swoon for baking’s scientific certitude and cooking’s wild uncertainty – it’s creative and often playful freedom of melding together various flavors.  It stands to reason then, that a savory tart is, well, my idea of perfection – my spirit dish if you will.  In keeping with my love of Mediterranean style cooking I decided on a seasonal veggie, ricotta, and herbs for this dish and then curated a shoot chock full of beautiful arrangements.  This combo of cooking and aesthetics is to me, what Eye Swoon is all about – indulging all your senses with exquisite things that inspire.

I decided to dedicate last weekend to mastering a version of my savory spirit dish: a golden and red beet tart.  Roasting beets is a tried and true favorite cooking technique of mine – roasting veggies is sure to bring out the natural sweetness of just about anything.

Being a perfectionist I researched of about 15 different savory dough recipes, fully considering each one, reading every review before finally deciding on a slightly adapted Pate Brisee from my friend Martha.  I’ve come to realize that my love and obsession of reading reviews is exclusive to my baking – tart shells especially.  They just have to be right – buttery but not greasy, crisp but not too hard.  It needs to be flaky while also holding its shape.  Well, I have to tell you, I think I’ve found “the one” with this beet endeavor.

Photographing the process and ingredients was amazing.  It allowed me to shamelessly indulge another facet of my personality: my newfound (thanks to Eye Swoon!) love of photographing and food styling. I mean, I must have taken 300 images of the beets in various positions and I could have taken more!

I do believe this would be considered a swoon-worthy experience all around for me personally and hopefully an even better one for you because this tart is DELISH!!!!! It’s herby, creamy, sweet & savory and a perfect make ahead lunchtime dish – earthy flavored food art at its best!
