Fired & Fresh Cauliflower

Fried & Fresh Cauliflower


1 head of cauliflower- cut into florets, leaves removed and core removed
3-4 cups sunflower or safflower oil- for frying
2 tablespoons of capers, roughly chopped
1 lemon zested
1/2 lemon juiced
2 tablespoons of extra virgin olive oil
2-3 tablespoons finely chopped dill
Salt to taste

The Prep

Heat your oil to 350 degrees Fahrenheit or 180 degrees Celsius. Fry little batches of the cauliflower until they are nice and golden (you do not need to stress about these being perfect, I actually like when they are not so perfect and on the darker side). Remove and place on paper towel, sprinkle with a little salt and set a side.

When half of the cauliflower is fried, place the fried and the raw cauliflower in a bowl, adding in the capers, dill, lemon zest, lemon juice, olive oil and season with salt. Toss and serve.

This dish is also great with an aioli or creme fraîche.
