Lemon-Sumac Quinoa

Lemon-Sumac Quinoa

Ingredients

serves 4

  • 2 cups quinoa -> 4 cup quinoa cooked (season quinoa with salt while still hot)
  • 4 cups roasted beets, cubed 1in pc
  • 4 cups roasted zucchini, cubed 1in pc
  • 4 tablespoons feta crumbled
  • 4 teaspoons parsley, chopped
  • 4 teaspoons tarragon, chopped
  • 4 tablespoons pistachios, chopped
  • 12 tablespoons Lemon Sumac Dressing (see below)

Lemon Sumac Dressing

Yield 3 Cups

  • 2 Garlic Cloves
  • 1 cup lemon juice
  • 1 tablespoon sumac
  • 2 tsp salt or to taste
  • 2 cups olive oil

 

The Prep

  1. Blend garlic, lemon juice, sumac and salt
  2. Keep blender on low and slowly drizzle olive oil to emulsify
  3. Mix half of the quinoa with 6 tablespoons of lemon-sumac dressing, ½ of the herbs, ½ of the vegetables, ½ of the feta, ½ of the pistachios. Garnish with remaining herbs, vegetables, and feta.
  4. Or, substitute grilled halloumi for the feta for a delicious alternative!
