Sicilian Roasted Cauliflower

Sicilian Roasted Cauliflower


Serves 4:
1 head cauliflower
1/2 cup extra virgin olive oil
2 T salt
Juice of 1 lemon
maldon sea salt

The Prep

Preheat oven to 450 degrees.

Rub cauliflower with olive oil and salt and wrap twice in heavy duty aluminum foil.

Roast on a cookie sheet for 2 hours, or until a knife can be inserted into the heart of cauliflower with no resistance.

Remove cauliflower from oven and open foil. Allow to cool to room temperature.

Using a paring knife, gently separate the cauliflower into large pieces.

Drizzle cauliflower with lemon juice and sprinkle with sea salt.

Top with sicilian condiment (recipe attached)
